When you enter the whimsical Wonderland bar and specialty restaurant on board Harmony of the Seas, Anthem of the Seas, Ovation of the Seas, Quantum of the Seas, Symphony of the Seas and Spectrum of the Seas, you pass through a “rabbit hole” and ornate golden door—the perfect gateway for the imaginative dining experience that awaits you.
Though the creative fare, like an earthy vegetable plate designed to mimic a garden and a molten chocolate ball with a hidden surprise inside, regularly delight diners, the cocktail program contains its own “wow” factor, too. The upstairs bar overlooks the dining room below and serves drinks that complement the kitchen’s artistic take on food—mixing flavors, textures and presentation by theme—with artisanal ingredients like fresh berries and sprigs of rosemary.
You can take a seat at the bar for a special, up-close view of the craft that goes into making these unique drinks, like the sweet, tangy, and smoky Rolling Stone—created with mezcal, honey, lemon and cucumber juices, yogurt and basil leaves—or The Stowaway, which mixes scotch and port with citrus and sugar.
“We all drink like we all eat: with our eyes first,” says Predrag Pavovic, a Wonderland mixologist. As a result, he says, the bar program “needs to have the proper look, proper garnish, proper serve…everything counts.” One of the first things you’ll see is your cocktail glass dipped into a cloud of liquid nitrogen, which chills it to below-zero degrees in a special machine behind the bar.
